Abstract
Pulsed light offers rapid inactivation of a wide range of microorganisms in foods. This technology involves short pulses of high-energy electromagnetic radiation in the spectral range from UV to infrared delivered by inert-gas lamps. This chapter focuses on the application of pulsed light in various liquid foods. After a brief overview of pulsed light technology, the equipment specifically designed for the treatment of liquid foods and critical processing parameters are discussed. Then, research conducted on the effects of pulsed light on the microbial loads and quality parameters of liquid foods is summarized. Finally, remarks on the potential commercial application of pulsed light in liquid foods are made.
