abstract = "Gluconacetobacter xylinus (G.xylinus) is characterized by its capacity to synthesize cellulose. Some strains of this organism are also able to produce complex exopolysaccharides (EPSs). In this study, two different G.xylinus strains 23769 and 700178 were used to study the role of EPS on cellulose production. The structure and size of both the cellulose and EPS produced was characterized. In this study, we clarified that G.xylinus 23769 and 700178 can produce a highly crystalline EPS with large size when galactose served as an exclusive carbon source.",
