Effect of cooling on crack development and mechanical behavior of eggshells

Abstract

Compression tests were performed using a plunger and a flat plate to determine the stiffness and ultimate strength of eggshells. The average maximum tensile strength to produce microscopic cracks in eggshell was 23.6 kPa. Cracks greater than 30 mm in length resulted in a decrease in eggshell stiffness. Rapid cooling did not produce visible cracks on eggshells, but induced microscopic cracks. Eggs from 72-week-old hens (compared to 31-week-old) and with poor shell quality were more prone to cracking during rapid cooling.
