Abstract
The effect of temperature and electrolytes on the viscosity of dilute dispersions of yellow mustard (Sinapsis alba) mucilage have been investigated. Mustard mucilage behaved as a polymeric electrolyte. Excessive heating reduced dispersion viscosity, as did an electrolytic solution of 3.5% NaCl and 3.4% acetic acid.
