Abstract
A falling-film milk pasteurizer-sterilizer was used to process milk at temperatures from 126.7 C to 148.9 C at a fixed holding time of 1.79 s. Processed milks were dispensed in 10 ml and 4 liter volumes and stored at 28 and 32 C for up to 10 wk. At processing temperatures in excess of 137.8 C, the milk was microbiologically stable during storage.
