Abstract
This study investigated the application of the fuzzy logic technology on real time control of a continuous whole milk powder processing system adapted to produce a dry milk product. The control objective was to start up the process and operate the system at the preset power consumption while providing a dry milk product with desired color. Control of a powder feeder, syringe pump, continuous high-shear processor, circulating water heating and cooling unit was accomplished using the feedback signals from the sensors for product color, product temperature and power consumption. The system control was tested with preset power consumption values of 0.75 and 1. 1 kW and desired product color ratios (redness / NIR * 100) of 80, 85 and 90. The fuzzy logic-based control algorithm provided promising results on automatic start-up, shut-down and control of the process at the preset power consumption with dry milk product at the desired color.
