Abstract
Vitamin A, a fat-soluble micronutrient, is required for a variety of biological processes including vision, development, and immune system and reproductive health. Retinol and retinyl esters in foods, serum, and tissues are generally determined after extraction of lipids into organic solvents, separation of specific compounds by liquid chromatography, and detection based on the UV absorption spectra and extinction coefficients specific to each compound. Special attention is needed in handling retinol and related compounds due to their sensitivity to light and oxygen.
