Abstract
There have been several recent reports of a widespread vitamin D insufficiency epidemic. With few naturally rich food sources of vitamin D available, new vitamin D-rich foods are needed. As a widely consumed staple food, bread is an ideal candidate for fortification. Vitamin D3 fortified bread has been shown to effectively increase vitamin D status in humans. Additionally, bread made with naturally vitamin D-rich yeast was shown to improve vitamin D status and bone properties in growing rats. Therefore, vitamin D-rich bread could become an important new food source of vitamin D.
